Nothing tastes better than local organic seasonal produce grown with Love. Here's a delicious recipe to make use of the abundant pumpkins around at the moment...

Cosmic coconut and pumpkin soup

Ingredients:

6 cups of diced organic pumpkin (or squash i.e. butternut)
2 medium sized leeks (finely chopped)
1 clove garlic (pressed or finely chopped)
200g block of coconut
1 heaped teaspoon ground cumin
2 teaspoons ground corriander seed
small chopped bunch of fresh corriander
table spoon of tamari (or enough sea salt to taste)
filtered or spring water
A sprinkle of Love

How to make it:

1. Lightly saute the leek and garlic.
2. Add the pumpkin along with enough water to cover the contents in the cooking pot
3. Bring to the boil, and then turn down to simmer gently for about 30 minutes
4. Whilst it is simmering add the fresh herbs, ground spices, tamari/salt
5. Roughly chop the coconut block and add to pot.
6. Allow the delightful aroma to flood your home.
7. Add a sprinkle of LOVE (for extra flavour!)
8. Blend altogether to make a thick creamy soup (if you don't have a blender you could always use a potato masher, to roughly press through the soup, allowing the squash to thicken the preparation).
9. Enjoy!

That sounds delicious. We're coming into summer now, and its too hot for soup, but I'm definitely going to give it a go.

Ahhhh, too hot for soup :0)

How wonderful! Until a couple of years ago I used to spend a chunk of the winter in Hawaii where the fruit was dripping from the trees and you'd often see carpets of avocadoes and wholesome food scattered accross gardens... there was actually little need to cook anything at all. We were entirely blessed.

Now I count my blessings other ways. It is most warming to enjoy the autumn colours here as the nights begin to close in and to enjoy warming earthy food local food (well, aside from the coconut which keeps popping in there :0)).

I make huge amounts of this stuff and it floods the house with the most delicious aroma. It doesn't last five minutes with my family and friends.... so I'll take that as a good sign :0)
